Maggie Cong-Huyen
Maggie Cong-Huyen is a recently confirmed Catholic. In 2008, she graduated from Stanford University with a degree in Studio Art. She currently works in alumni relations and development at Northwestern University's Kellogg School of Management. Maggie is a 2014 CoC alumna and 2nd grade catechist at St. Mary’s in Evanston, IL.
Roast turkey, prime rib, mashed potatoes with gravy, gingerbread cookies, chestnuts, champagne…Advent is upon us, and hopefully many of us will be blessed to take part in feasting with the ones we love. ‘Tis the season for our favorite comfort food. Cooking has become one of my favorite hobbies within the past few years, and I have seen parallels between my experience re-engaging with the Catholic church and my development into an amateur cook.
Last summer, I told my coworkers, friends, and family that I was taking a week-long staycation in August. I shared my simple plans to relax in my apartment, cook “real” meals, endlessly browse Netflix, and exert as little effort as possible.
But these were lies.
In fact, I did the complete opposite of what I claimed to be in my plans. During this “staycation,” I was never in my apartment, didn’t cook a single thing, willingly abandoned my laptop, and enjoyed maximizing my efforts into learning and meeting new people.
The summer season marks the end of a school year and the beginning of a much-anticipated long break for many school-aged children. As a working "grown up," it's been many years since the last time I enjoyed the pleasure of a two-month vacation. I am a bit envious to hear about the summer plans of my co-workers' children, consisting of camp getaways, weekday afternoons in the park, and unprofitable lemonade stands.
